The weekend after Bub & Jackie's reception in Dallas, I drove all by myself to Waco to visit one of my dearest friend's Heather (from RX school.) It was my first time to Waco and we had a splendid time! We went shopping, visited her pharmacy, cooked and just got in some good girl time. We need to do it more often!
The weekend after that was a (depressing) Astro weekend for us. We went Friday night with some friends from church and enjoyed the fireworks afterwards, more so than the game :) Sunday we went with my mom's company, so we had a girls day out. We had a lot of fun eating unlimited chili dogs and nachos!
I also did an "experiment" this weekend. I made my own version of "Freezer Cooking." When I was in school, I would buy meals already prepared and frozen so that there was a small chance Jeff would get at least one real meal a week. Well needless to say, I am still busy and do not get to cook often, so I 'google' some options. I found 7 recipes online that I could cook ahead of time and then freeze. It took around 4 hours on Saturday, but I made a total of 15 meals. We will see how they taste when we reheat them.
Also this week I had the pleasure of my dear friend Wendy (from RX school) being in town for work, so we got to have dinner! It had been almost a year since I had seen her, since her and her hubby have been in Hawaii! We are looking forward to meeting baby Shetler :)
Yeah, I think I am caught up with the present :)
